Corned beef, Guinness-braised short ribs, maple-bourbon glazed carrots, Brussels sprouts with pancetta, cheesy garlic mashed potatoes and cheddar chive scones.
We also had three home-brewed beers (I really liked the porter), some delicious appetizers and Irish tiramisu (made with Bailey's instead of Marsala/rum/whatever).
The prep of the scones was perhaps my favorite in that the ingredients were all pre-weighed early when there's plenty of time and everyone is sober. Then they can be dumped into the bowl and mixed, formed and baked so they can served fresh.
