    Corned beef, Guinness-braised short ribs, maple-bourbon glazed carrots, Brussels sprouts with pancetta, cheesy garlic mashed potatoes and cheddar chive scones.

    We also had three home-brewed beers (I really liked the porter), some delicious appetizers and Irish tiramisu (made with Bailey's instead of Marsala/rum/whatever).

    The prep of the scones was perhaps my favorite in that the ingredients were all pre-weighed early when there's plenty of time and everyone is sober. Then they can be dumped into the bowl and mixed, formed and baked so they can served fresh.

    But that looks pretty good. Another thing you can do with non-yeasted things like scones and biscuits is make all the dough and form it ahead of time, freeze them on a cookie sheet, and pop 'em in a Ziploc in the freezer until the day you feel like a biscuit or scone or whatever - keep the temp the same when baking, and just extend the baking time/keep on eye on them. I do this all the time for dinner parties with my biscuits and they always come out as perfectly as if I'd made them at the person's house.

    I'm not sure I've ever heard the phrase "with my biscuits" before. Are all your friends pastry chefs, or is this indicative of a much sadder reality involving you serving food to other food in desperate hopes of slaking your loneliness?

    Corinna's friends clearly aren't pastry chefs, they're pastries.

    Also that is a good idea and great for a toaster oven.

    Also I am looking forward to making beef stock with the bones from the ribs. I had the butcher cut out the bones and they are sitting in my freezer; there would not have been room for them in the slow cooker.

    Definitely! Whenever I make biscuits for a gathering I make a double batch so I can just keep a bag in the freezer for whenever.

    Made the following to take to a dinner tonight:

    Broccoli Matchsticks and Kale Salad with hazeluts and manchengo

    Roasted Cauliflower with Pine Nuts, Raisins and Mint

    I really liked the latter, but I thought the taste profile was a little unbalanced on the former. Next time, I think I'll either leave out the cheese, or perhaps try adding some sliced apple or pear.

    So tonight I am making a sauteed sausage and veggie dish. I however just thought of apple smoked bacon and seen the same thing with sausage before. I have this idea of dicing up an apple and throwing it the saute pan along with everything else. Anyone else ever try something like this before or would suggest me from doing it otherwise? I'm going to start cooking in about 20 mins so if I don't hear anything I'm just going to give it a shot.

    It was good actually, brought a natural sweetness to it so I didn't even have to add any sugar. My only fuck up was that I cooked the diced apple a little to long but next time I know better.

    No sorry. I'm not a calorie counter. It was one of those "what do I have left in my fridge/cupboards" experiments. Here's the ingredients sans measurements, because I'm not much of a measuring person either:

    Risotto: Garlic/basil infused olive oil, arborio rice, garlic, shallots, homemade chicken stock, tumeric, medium curry powder, chili powder, small amount of butter, salt and pepper. The yogurt is 9% greek president's choice from superstore that comes with this side container of fig sauce which I used for the meat. I would have preferred a normal/less fat yogurt, but it was the only plain yogurt I had and it made me commit to a fig sauce which worked out awesome.

    Pork/Carrots/Apples: Seasoned pork chops from Costco. Seared the outside in a pan. Added the carrots, apples, salt, pepper and a touch of the chicken stock to deglaze and put it in the oven to finish. I had the carrots simmering i the chicken stock I used in for the risotto so that they would be partially cooked enough to finish in the oven with the pork. Once the pork was done I pulled the pan out of the oven and let the meat rest on the side. Then to the deglazed pan with the apples and carrots I added a pinch of brown sugar, cayenne, the fig sauce that came with the yogurt and a touch of butter.
