    Default a thread about spaghetti

    i hate spaghetti






    seriously

    it was my favorite food when i was eight years old and now anytime i go home my mom thinks she is doing me some kind of favor by making it for me. but i totally hate it and think part of the reason is that her spaghetti is just bad. basically, and only because i am fond of spaghettios, i am willing to give variations on the recipe a try.

    if you have any spaghetti recipes or commentary, post them here.

    and before anyone asks, no i don't really like italian food in general

    I make my own sauce. I can't post the recipe though. I'm going to make some sort of attempt to get rich off of it someday.

    I enjoy spaghetti very much, but I haven't had it in a long time. Lasagna is better. Or linguini with clam sauce. MMMMM.

    We have spaghetti about once a week with whole wheat pasta. I have a giant batch of sauce in the freezer and I just defrost as necessary.

    i think part of the reason i don't jive w/ italian food is cream sauces upset my stomach and tomato sauces are really unappetizing to me.

    lasagna is cool even though i typically only enjoy uncooked tomato

    Spaghetti with Lemon, Chile and Creamy Spinach
    Instead of using heavy cream, this tangy, spicy dish calls for low-fat yogurt, which is packed with protein and calcium. Stirring a little flour into the yogurt prevents curdling as it simmers and creates a thick, rich and satisfying sauce for all kinds of pasta and vegetables.

    TOTAL TIME: 20 MIN SERVINGS: 4

    1/2 pound whole wheat spaghetti
    1 1/2 cups plain low-fat yogurt
    1 tablespoon all-purpose flour
    1 tablespoon extra-virgin olive oil
    4 garlic cloves, minced
    1 red Thai chile, minced
    10 ounces baby spinach
    Finely grated zest of 2 lemons, plus 1 tablespoon fresh lemon juice
    Salt and freshly ground pepper
    1/4 cup freshly grated Parmesan cheese

    Directions
    1.In a large saucepan of boiling salted water, cook the spaghetti until al dente. Drain and return to the saucepan.
    2.Meanwhile, in a bowl, whisk the yogurt with the flour until smooth. In a large skillet, heat the olive oil. Add the garlic and chile and cook over moderately low heat, stirring occasionally, until fragrant, about 2 minutes. Add the yogurt and bring to a simmer over moderate heat, stirring. Add the spinach by the handful and cook until wilted, stirring. When all of the spinach has been added, stir in the lemon zest and juice and season with salt and pepper.
    3.Add the sauce to the spaghetti and toss well to coat. Mound in bowls, sprinkle with the Parmesan and serve right away.

    Notes
    One Serving 329 Calories, 7 gm Total Fat, 2.8 gm Saturated Fat, 49 gm Carbohydrates, 9 gm Fiber.

    OP: How can you dislike spaghetti? That's like disliking rice. Or like, bread. I have a feeling it's not spaghetti that' s the problem, I have a feeling that the problem is YOU.

    I have a feeling his mom uses jarred sauce, and that's the problem. the sauce is probably not very good.

    I rarely make or eat spaghetti because I was spoiled with homemade most of my life. My grandparents and mom raised me and my grandpa was born in Italy so he made everything from scratch and we would have a different pasta dish every Sunday and he of course made enough to bring plates of it over to neighbors. He had a garden where he grew the tomatoes and smashed them in the garage and would make enough sauce to fill about 100 mason jars.

    My favorite pasta was gnocchi.



    I suggest the OP keeps it simple and goes to a real italian deli. I know Vincents restaurant in NY ships a fantastic sauce to delis here in Phoenix and you can get the more fresh like noodles at the deli as well.

    Anything you get from a regular grocery store isn't going to be as good as the stuff you can find at a real italian deli.

    I never make pasta even though it's super easy and cheap to make good sauce. If I'm going to make noodles for some reason I always skew towards Chinese/Thai/Japanese/etc., not Italian.

    Yes, this too. I make rice noodles 3-4 times per week. They rule especially because they are fast.
