Oh and I absolutely must add "Superstar" as done by Sonic Youth. The Carpenters version can kill me on its own, but SY's is way too fucking haunting and great. as on the liner notes "not produced, just played"

Nobody has ever covered that well. I've mentioned it before, but Arcade Fire and U2 fucking slaughtered it.
EDIT:
For the record, I still like Fallout Boy's cover of Beat It.
Here are some of my favorite covers.

I love cover songs. A few of my favorites:
Basically, anything Patti Smith covers sounds good.
Marilyn Manson covers are also usually entertaining.
Love punk covers of songs I hate... the cover actually sounds good.![]()
I love Manson's covers too, generally, but his Tained Love was really lazy.

Sweet Dreams particularly, yes.
The Sweet Dreams cover by Manson was one of the first songs by Manson that got my attention.
Sonic Youth covering Madonna.
There was a slightly better video of it floating around that was a little more forgiving, but yes, it's awful.
Five Years notwithstanding (athankyou Gonsh), I don't think Arcade Fire cover other bands well. There's always like four or five people surplus to the song's requirements, and they always sound like they rushed it. They do a fantastic cover of Poupée Du Cire, but I will buy Malcolm a frozen lemonade for every non-European who's ever heard of it. I love their versions of Maps and Naive Melody, but neither approach the originals. The only song they ever covered that I did and do still prefer to listen to than the original is Age of Consent.
Works both ways though, they're a tough band to cover too. Foo Fighters took great pride in making a horrible arse of Keep The Car Running and Norah Jones (!?) boring'ed the hell out of Ocean of Noise.
The only band to ever cover them with awesome success was Calexico, who's Ocean of Noise is gorgeous, misremembered nonsensical lyrics and all.
