Every person's body is different. I ate super-spicy Indian food all three days last year with no problems. But anything greasy or fried would have wrecked my stomach. If you find something that doesn't upset your stomach (such as gyros), I recommend you stick with it all weekend!

I don't eat much at Coachella. I always come away a few pounds lighter.
I've had pizza and that chinese food stuff. I bought some kind of chocolate snack bar in 2004. Bad idea. It melted before i could finish even half of it.
It didn't make me poop though. Just very chocolately.
Coffee goes right through me, so do egg/sausage Mcmuffins. Don't think you'll find either at the food stands though.

Last year, I had almost exclusively barbecue, a slice of pepperoni pizza from I less than three Spicy Pie, lots of Sambazons, and had to shit every day. Which is weird because beef usually constipates. Maybe it's just the environment.
The trick is to eat a fairly large breakfast (with plenty of fiber) at least an hour or two before you plan on heading to the polo field. Some strong coffee, too. If you empty out before you hit the festival, you shouldn't need to "evacuate" until the next morning when you start the process anew. That's my trick, and it didn't fail me last year. I generally have a nervous stomach, and I even ate Indian food at the festival!
Ive normally followed that fiberous breakfast procedure... sans the evacuation procedure. Think Ill give that a try this next weekend. And yes a nice hot cup of stong fresh coffee after a couple granola bars would do the trick quite nicely.
Ive never really had to worry about bowel issues at Coachella. The first year I went '06, I didnt have a single movement for 3 days. Thats not really healthy being the regular person that I am. 2nd year I went '07, I had one movement. My body tends to slow down whenever I leave town but It really slows down at Coachella. Good for me I guess.
