Fruit works really well. Apples and oranges. Carrots. Granola bars. Crackers. Peanut butter and bread with plastic knives. Coachella was probably the healthiest I ate all last year. I started to feel great by Monday (aside from the drug exhaustion).
^^ that's pretty much what i bring, along with dried fruit, individually sealed string cheese, and beef jerky

well other than what you guys already mentioned i brought lunch meat and kept it in my cooler last couple of years which was a nice substantial lunch each day before a long day of strenuous dancing and drug use followed by an evening of drinking.....poor body....it requires the fleash of once living animals to properly power itself to party to its fullest
Agreed. I find I carb loaded all morning at the camp until going in. Once I was in, I really only had time for a wrap and maybe a smoothie (depending on what else was flowing through my system)
For the site I recommend not really salty foods, you sweat enough and are in the hot sun no need to induce even more dehydration. A cooler is key.
I usually bring:
Unsalted mini pretzels
Packets of tuna (those 3 oz ones that are flavored work well)
Bagels
Baby Carrots
Bananas
Packaged deli meat, especially the ones in plastic containers w/ lids
condiments
jello pudding cups!!
Box of cereal for snacking
....and goldfish. Salt be damned, I want my goldfish.

salt = water retention, though. salty stuff is great for coachella, IMO.
Oranges and banana chips/ bananas. Lots of them.

I'm a lo carber so basically it's water all morning. I eat once inside the fest. I have a piece of chicken on a stick with grilled veggies. Then lots of water. Around dinner time I have a smoothie. Then later in the evening a small snack.
I pretty much stick to the chicken on a stick place now. After a few years of trying out different booths inside the fest, it's the only one that is consistent and truely low carb. The rest is vegiterian or too sugary or breaded.
I was also a water loader until about noon. I also survived on Rice krispy treats and cheez-its but I'll probably be a little healthier this time around. On the way (my route at least), theres a great nut place called Hadleys with bomb trail mixes. They run a little high but they're damn good nuts so I'll probably stock up there.
NO FOOD IN THE CAMPSITE. IT ATTRACTS BEARS.

If I were you, I would be more concerned about any food sold on a stick than I would be about carbs.

Banana bread is one of my all time fave foods for festival camping. Makes great french toast too.
