What everone else said. Olive oil (unless the "light" kind) typically has enough impurities to reduce the smoke point to what would be impractical for frying, and would taste absolutely disgusting. Canola, grapeseed, coconut, palm, shortening, soybean, cottonseed, peanut, etc. all will work fine. It also doesn't need to be a vat of oil, relatively shallow frying works fine. Flip halfway through cooking.
For ground chicken (unless it's ground dark meat), you may find the results will be dry. Fast food type patties add a considerable amount of fat and other shit to get a juicy patty. Since it's already ground adding fat is virtually impossible, so consider adding a binder to introduce moisture back into the meat - either dry nonfat milk powder, bread crumbs & liquid, textured soy protein, sodium phosphate, etc. may help.
