I thought that for the untitled album, they kinda invented their own language, Hopelandic or something. Lyric pages blank so you can interpret however you like.
Other stuff is mostly Icelandic though I think, found a few translations (not sure how great incredibly accurate they are, but still) from this site:

and yeah, I must agree that not-knowing what the lyrics mean kind of does add to the suspense and experience. just makes you want to hear more. but i was always curious about some of them.

i remember i think on sigur ros' site they actually show you how to pronounce words in icelandic...which i thought was pretty awesome
