Enchilada shootout

For the past 4 years, we have hosted an Enchilada shootout. People bring their favorite/most creative enchilada recipe and we all sample and vote on the best.

It's good times.

I'm looking for a clever/unique recipe. The first year a chocolate, banana enchilade won. (I thought that was cheating.) Then we've had a habanero winner and two vegetarian winners.

Do you all have any suggestions?

Six people are dead and countless others injured after a shootout at an underground enchillada party. Witnesses state that the violence erupted shortly after 9 p.m. when the enchilada of the year was awarded to a chocolate banana enchillada. A group of party goers confronted the judges stating that they thought that was cheating, when the judges ignored them they brandished their weapons and struck down the two judges as well as the creator of the chocolate banana enchillada, and the chef who created a habanero enchillada. (two vegetarians were also killed in the gunfire)

Things can get pretty fired up during judging after several tequila shots.

Tamales are really good but sometimes people make them with too much masa and it overpowers the actual ingredient inside

I like tamales but you can't get creative with them like you can with enchiladas.

I had a chocolate tamale with a rasberry salsa 2 years ago at the festival. It was pretty good.

Algunz, I'm trying to think of something right now. It's hard to say without actually experimenting on it first. Things that automatically come to my mind; chanterelle or morel mushrooms, foie gras, gruyere, liquified sweet corn, cilantro, heavy cream, corn tortillas from cinco puntos. I don't know. I just ate at Panda right now and my mind isn't on food.

One of my favorite pieces of authentic mexican cuisine (as in actually made in mexico for some time, unalike the choclate banana deal) are pineapple tamalesand enchiladas. Check it out:
