this little thing appeared in an LA Times blog a few months ago.


Dear Goldenvoice, many of us here are a little jealous that Lollapalooza had Chicago chef Graham Elliot Bowles curate the food options. Can we one-up them on the West Coast, perhaps? How about Rick Bayless? He's got a foothold in L.A. now, and that would be a slight blow to Chicago pride. Thanks.

Coachella has a great food selection and I appreciate their (mostly) exclusive use of CA based restaurant vendors to provide said food.

I found the Ruth Chris booth last year totally ridiculous.

I like the idea Tom, but have mixed feelings. Seems most fair to do this as an assumption based Pro/Con list.

Pro
A single curator would probably up the quality of the lower performing vendors.
A single curator could bring to the festival dishes not traditionally available from a stand.

Con
A single curator would limit variety based from the many points of view of individual stands.
The selected curator may not conceptually understand the product of the vender.
Single curator requires more coordinated training for each vender in order to standardize the dishes.
Individual vendors allows those with exceptional skills and products to reach their highest potential, unencumbered by external oversight.

These are my initial thoughts, but now I'm hungry.

I think Outsidelands has Coachella beat in the food department. Hands down.
Their selection of food and quality was great, but I am pretty sure it had alot to do with SF's foodie culture. If Coachella came close to that then it would be a win, but with more LA influence please!!

That being said, I am almost positive they have their food vendors locked in already so this is all probably moot.

I loved the food options at lolla. Every option besides the obligatory basic hot dogs was excellent. They didn't have any of the crappy street fair stuff that takes up far too much of the main Coachella food court.

That said, I find most of the options between the Outdoor and the Gobi to be strong - I'd like to see the main area bumped up to that level of quality.

There's a place down the street that's been making these with King's Hawaiian bread. It’s such an improvement from that smart and final styrofoam bread.

Oh yeah, people from so cal would prefer that Rick take his shit restaurant off Melrose.

Is it just my imagination or has the food quality gone down and the prices gone up the last two years? I really miss the tri tip subs from 06-08 and the brazilian bbq in 08.

This is a DANGER DOG. From the streets of LA. My boyfriend is a Chef in Old Town La Quinta. I had him put one on his menu. This place is right next to Coachella. The Grill On Main. But don't tell anyone. ;)

I think its fair to say In-N-OUt would be a very welcome add to the food lineup.

I love this idea, although I'd be more prone to suggest a Susan Feniger and Mary Sue Milliken or a Nancy Silverton or a Ludo Lefebre over the Chicagoan Rick Bayless.

Feniger and Milliken are Angelenos, and have the hugely successful Border Grill, Ciudad and Street under their belts. Most recently, Border Grill has started a taco truck, so they know what it takes to do good food for cheap in a temporary setting.

Nancy Silverton is another Angeleno with La Brea Bakery and Campanile to her name. She is about to open a new burger joint, and she authored an excellent cookbook on gourmet sandwiches, so she knows about casual and portable eating.

Ludo would be my top pick, because, I mean, look at him. He's straight up rock and roll in a chef. Although French by birth, he's been living in LA for a while now, and is the force behind the super yummy restaurant Ludo Bites. More recently he's been taking his act on the road with pop up restaurants and the LudoTruck, so he seems like an ideal choice for knowing what it takes to make good food in a festival setting.

I would love to see some of LA's more interesting eateries come out to Coachella and do stands, and I think that given the power of a star chef curator, you could maybe convince places to do that. Or at least get Zankou Chicken, Kogi, Pink's, etc, to show up.

agreed man...that side has some great options. aside from spicy pie and a few others, the main food court is just a step above carnival food.

Here's another vote for the lobster corn dog. It's a little more weird than you might think, but interesting nonetheless. I did prefer my daily breakfast of sticky rice with fruit at Lolla. Oh my yum.

As for Coachella, Ruth's Chris steak sandwich... tasty.

Sorry for killing this thread for my Eddy Curry talks...

lets revive this... I'd like some food rumors/speculation talk instead of just the endless threads of lineup rumors...

Personally I just want some lighter food options. It was a million degrees there last year, eating those heavy hot meals was just too much. I'd prefer a nice deli with fresh ingredients... something refreshing like that, vs. something that felt like getting shot with a tranquilizer after you ate it.

Food was never the problem, for me it was the water/lemonade money I was spending, because it was so hot, you had to constantly hydrate, and they were charging enough to make it really annoying...

Anyways, I'd approach it like you would going to an NFL game, costs are about equivalent to that, so then it depends on how many meals you plan on eating per day inside... I'd say 10 per meal minimum to bring, plus at least another 10 per day on drinks.

Was going to say 100 minimum, but 150 is probably a safer number, also depends forgot to add this, depends on if you are drinking alcohol... number increases astronomically if you plan on drinking all day.

They have a farmers market, and if you can handle packing a cooler in your car, food you bring will stay fresh. They sell ice in the tent camping. There are tons of options buddy.

I never checked out that farmer's market... was camping but never made it to that, was that just one of the booths up front there or was there somewhere special for that? And what type of costs if you can remember where they? Reasonable?

I wouldnt be surprised if it's priced like at regular farmers markets. Anyway, its up by the dance floor (and the other foods) in tent camping for a limited time each day.
